A seasonal menu of award winning modern Australian cuisine is prepared from the open plan kitchen and an extensive cellar of Australian and imported wines is available to complete the experience.
HARBOURBAR
harbourbar known for having some of the best views in town, has been redesigned by the stylish hands of BARstudio in line with the direction of the hotel of uncluttered timeless style, using natural colours creating a warm and relaxed lounge bar with some of Sydney’s most spectacular scenery.With creative use of mirrors and furnishings to showcase space and light, the redesigning of the whole space makes harbourbar look like it has had more, than a nip and tuck. The redecoration includes new smart large cushioned sofas along with ash limed lightwood finished chairs and timber screens that creates cosy, private corners for guests. The ceiling is of a soft cushioned cream fabric contrasted with decorative ceiling lights and floor lamps and Babinga wood stained dark polished floor boards. The room itself is more spacious with the removal of shelving areas and decorative columns to open up the space.
In addition, a new tapas bar including three long tables that extend from the tapas kitchen into the bar area are new features. Stools can be rearranged around these and the tapas tables are separated from the kitchen by an etched two tone native waratah silhouetted mirror.

PRIVATE DINING ROOMS
The restaurant features two private dining rooms, the Harbour and Opera Rooms, as another option for private entertaining. Each room has seating for 24 guests or combined can seat 52 guests. Both rooms offer spectacular views of the Harbour and Opera House through large glass windows.
EXECUTIVE CHEF ALESSANDRO PAVONI
Alessandro Pavoni began his career in Brescia Italy in the early 1990’s working in establishments such as Carlo Magno working under the famed Igino Massari, and trained at the Art, Science and Technological Centre of Food in Brescia and at the Caterina de Medici Hospitality School. This was followed by restaurant Fiordaliso (Michelin Star) in Garda Lake Italy before moving to Bermuda and France where he further refined his techniques. After years spent in the gastroniomic northern region of Italy cooking in the Italian classical style, Alessandro moved to Australia to purse his two passions, food and his Australian wife. Making Sydney his home in 2003, Pavoni brought his talents in modern Italian food to his role as head chef at Luna Blu in Leichardt. Following this, he moved to Beachhouse restaurant in Whale Beach and then to the iconic Park Hyatt Sydney in 2005. Alessandro’s evident passion and sophisticated talent both in food science as well as management skill, has been acknowledged through his rapid rise through the ranks to take the helm in December 2006. He now leads the team of 26 in harbourkitchen&bar, Park Hyatt Sydney’s Tony Chi designed space.

Breakfast on a delicious hot and cold buffet of early-morning delicacies - a divine way to start the day. The littlekitchen menu offers a variety of snacks and smaller meals designed to aid jet-lagged globe-trotters, or accompany a quiet drink in the afternoon. For those able to contain themselves until conventional lunch or dinner times, look out for dishes highlighted on the menu in bold – seasonal dishes singled out by Pavonias the best of the best. Mains include wood-roasted red snapper fillet with an olive and pinenut crust and caramelised witlof, or try the slow roasted kurobuta pork fillet, pancetta lardoons, cauliflower puree and sesame.
